I know. It sounds weird. But it's awesome. Devin was very suspicious too and now loves it. You'll eat the whole box of strawberries haha

 

I think Monte might have hit on the potential reasons for what happened.

What kind of pan did you use? What kind of fat did you use? How big did you cut the pieces of potato?

Bigger pieces of potato take longer to cook and it is harder to cook them uniformly. 1/2" or smaller if you can.

I use olive oil for the flavoring, not butter. If you used butter, it might have contributed to the burning, especially if the heat was too high.

Start by cooking the onions a bit in the oil. Not too long. Just til they turn translucent and a few might start to get a bit browned. Stir often.

I keep the heat between low and medium. Low and slow and stir pretty often, especially after you start to see the potatoes start to turn brown. Use the spatula to flip the potatoes so the crispy side is moved to the top. This helps to get every piece crispy (as much as possible). I don't add salt until near the end of cooking. Salt to taste and check for doneness.

It always seems to take longer than you think it should. Have I mentioned stir often?

 

Butter may have been the issue. They were browning and not turning translucent at all so I added the potatoes. I did cast iron on lower heat and cut the potatoes to 1/4" size with a bit of seasoning. I'll have to try again. They weren't terrible but definitely missed the mark.

 

Hell Yeah. Keep at it. Try using a cooking oil instead and cook the onions a little less before adding the potatoes. Don't be afraid to change things up a bit. It takes practice to be a good cook.

Avocado oil has a higher smoke point if that helps

 

I use olive oil because I like the flavoring it adds. Some cooking oils are more neutral flavored but there are many choices out there. I do not use butter or cooking spray like Pam.

 

You can also cook things separately to practice getting them "right" individually. You'll lose a bit of the flavor melding, but the way we've been teaching the kiddo (who can easily get sidetracked with "prep of the next thing") is:

1. Get the onions ready; cook them until they are translucent but still have what you think is "a couple minutes" to be totally done. Remove from pan and set aside on plate.
2. Get the potatoes ready; cook them until they are a nice golden brown.
3. Dump the onions back in and cook for a few more minutes to brown up the onions and meld the flavors a bit.

Also, never forget salt.

 

Olive oil is the only cooking oil I'd use. The rest are poison.

 

I still can't find the bolts I bought for the skids. Which normally isn't a big deal. Except I can find the allen bolt that I was using before anymore at the store. They don't have fine pitch in m12 or whatever it was I needed. So i need to find the bag of bolts...

I found the bag that I bought the additional 2 bolts which I then put in the big with all the bolts. And now...poof.

 

You'll find them 5 minutes after you get new ones and everything installed.

 

They are where you are assuming they are not. Right next to them will be the set of keys you can't find either.

Doubt it, they are probably locked in the truck.

 

oh, i didn't loose them. They were in my bag which I knew they were. Plus the other key on the seat haha
