    I did a 9lb brisket a couple weeks ago on my pit barrel cooker that was done in ~4 hours but there isn't a whole lot of temp control with my setup and I was reading 350-375* for a while. I was worried that I had cooked it way too hot, dried it out and ruined a piece of meat. After 5 hours wrapped in foil and a couple towels in the cooler it was moist as could be and the best I have ever done.

    Most importantly though, how did yours turn out?

    Well fuck... heading back home over the Hwy 20, I went to pass a slow vehicle in 3rd gear and my clutch started slipping. I’m closing in in 163k miles. I’m thinking of upgrading to a weighted flywheel too seems how this is gonna cut into my gears and lockers money. I’ve never had any issues with my throw out bering. Would the hydro bering be overkill or insurance down the road because I’ve been lucky so far. As far as a clutch I don’t think I’ll need anything over a stage 2. I do daily my truck and run around in the hills a lot playing on the weekends. Anyone that’s been down this road want to chime in from experience. We have different needs than a guy that may live in Kansas.     They look solid as shit. Welds are straight, nothing is off kilter, the ratchet bar has deep teeth, the pawl engagement is solid. The secondary lock bar is a great added peace of mind.
    Only one of them was off square enough that I didn't like how much it rocked. Easily fixed with a file to level out the bottom of the offending legs.

    Only con I can see is the stickers were applied by a one-eyed man sprinting past. Not a single one is on straight. :rofl:

    think it was just a one off bad bearing put together.

    clutch i cant help you out. I have URD's Twin disc setup that they no longer sale. if i ever get a new clutch it will be with a heavy flywheel and probably a stage 2 but not 100% sure

Sounds like Jake went through hell. I lost track of how many times he pulled his trans out. Seems like if you don’t use a CM clutch and screw with your OEM flywheel you should be golden.

    Mine was the opposite as eluded too. That sucker cooked and cooked and stalled twice. Holding for that long isn't the worst. Add some liquid to the wrap. Most of the BBQ joints are way ahead on finished briskets by many many hours and use holding cabinets. Really expensive Alto Shaam halo heat cabinets. But I've done exactly as you have. Lowest oven setting before FCT treatment.

    How did it go?


    My only hot and fast attempt (on purpose) led to the need for a chainsaw :rofl::bananadead:

    Overall, it was a "success." Everyone went back for 2nds at least. The point was still very moist and tender, and the flat was good after getting past the first few slices (too much surface drying of the meat in that area, making it tough.). Some tough/stringy parts at the very out edges, mostly where the heat wrapped around the plate setter in the BGE, so those didn't make the serving platter.

    I wonder if I should have flipped the brisket over a time or two while hot-holding to redistribute some moisture......

    Cold leftover flat this morning is delicious, having cut a few slices to test (I didn't slice the whole thing last night, it was a small gathering.). Going to make brisket nachos for lunch to also use up the rest of the homemade guacamole I made.....:hungry:

    The only other thing I screwed up was BBQ sauce. I'm not much of a "sauce" guy, I want the meat to stand alone. But worried about a dried out brisket, I should have had a plan to either make some or have a better bottle on hand. All I had was a sales sample bottle of Kraft reduced sugar BBQ sauce, so I tossed that on the stove and heated it up.

    The weather held out for us, making it a good day. Today is typical Seattle, dreary rain. So mostly I'd say.....

    I like the cold slices the next day. and I'm in for some nachos!

    Glad the weather held. I was out there for 5 years (Kitsap/Bangor). I still remember the weather vividly :rofl:

    Pulled the trigger on the hydro bering, heavy flywheel and stage 2 URD. Sucks, definitely wasn’t the little detour I wanted to take right now. Buy once, cry once and put it to bed and move on I guess.
