    I may have accidentally made the best steak of my life...

    Wanted to try the reverse sear everyone is talking about. So, uncovered the PitBoss and gave it a go.

    Set it to 220°

    After and hour or so it got to 110°ish so it was time to crank up the heat.

    End result was a perfect medium rare. I usually like it a little rarer, but this was so good it didn't matter! Crust didn't quite get as done as I would have wanted, but I didn't want to burn or overcook it.

    The side of mushrooms was something I ad-libbed and they were abso-fuckin-lutely delicious!

    First of all that’s a thick ass steak. You did good reverse searing it. I have been a fan of hot and fast forever and thought reverse searing was for snobs. Well, after trying it I’m a believer. On the over an inch thick stuff your never going to get the radiation to the middle by hot and fast so you wind up with a crust but a rare middle. My wife doesn’t like medium rare so I usually just throw hers on a minute before mine. But when you get into the thicker cuts, it doesn’t work that way. You gotta get that energy to the middle of the meat without charring the outside and what you just did is the way. Nice work

    I know its not exactly a grilling post, but its semi-related.

    I am in the process of relaunching my BBQ Dry Rubs, and I have been working on building out a new manufacturing facility. I could have gone with a copacker, but I want to retain control of the process and IP for now. plus in the past we played up the small batch aspect and the freshness that came with it, Something I seen others copy recently...

    So you will probably see a lot more of my cooking.

    A grilling thread?!

    Well, my cousin brought over an old grill just days ago that he's owned for over 12 years. You know, one of those setups you buy from a dude who knows a dude that used scrap bed frame angle iron and a half barrel.

    It was completely rusted through and I wish I got a before picture so this is all I've got (this was after I cut out some completely rusted out parts).

    Short of making a complete new frame (my suggestion) he wanted to keep the whole project at a minimum so we opted for just replacing the bad.

    Started with reinforcing the legs by adding square tube between the long cross bracing.

    Since the ends of the legs were just bare angle iron, I welded some nuts on some square cut pieces and then welded those to the bottoms.

    Then I proceeded to cut out multiple panels for welding onto the frame itself.

    After getting home, he took to getting rid of all the surface rust all over and getting some primer before paint (high-temp stuff).

    Just good to see it's getting a whole new chance at life!

    Which leads up to today - my wife bought me a new grill so I hope to start posting in here at some point.

    Wife is also surprised I just didn't make my own, would be super easy! :rofl:

    Thing is, local market for grills are weak (people near me have lots of money, but don't spend shit).

    But we just redid the whole backyard this summer (new concrete poured, artificial grass, gazebo, and more).

    With my birthday coming up, she insisted on getting me something so we went to Lowes and got some patio furniture and a grill so, Happy Early Birthday to me!

    Can't wait to post, especially since I don't really grill. I can make a mean steak at home, but I normally bake breads, pastries, etc :anonymous:

    I would've built so many - it's so quick and easy building perfectly square frames for grills.

    Thanks!

    It's at my cousin's grill and he's doing all the painting, etc. Wish I could see it or get more info but he's +3hrs away. He had stopped by real quick and brought it over for me to repair.

    The legs in the second post I just made, but that's going to be a 12' wide kitchen shelf that'll receive a custom wood top. It'll go raw, or receive flat black depending on their request.
