Thought I would see if anyone else here likes to bake bread. I like to make all kinds of bread. The wife got me 2 new books on bread baking for Christmas. Can't wait to try a few new recipies.

Always wanted to, never have. I’ll be following this thread for tips. I’m kind of a bread snob, always trying to buy freshest from store or bakery breads.

We have a bread maker and like to bake fresh bread. I actually prefer old-school bread in the oven rather than the machine, but it's almost the same thing. I prefer just regular plain white, but my wife prefers all kinds of weird brown, grains, herbs, etc. flavors. A few years ago my son was diagnosed with gluten sensitivity and then my wife realized that her stomach problems were also because of gluten - never even knew about gluten allergies or seliacs before that. Anyways, most gluten free breads sucks, so we have scaled back on eating bread at home. We have found a few recipes that are okay. I don't want to eat regular bread in front of them, since it would be just mean knowing how much they would want it, but when I am at work or out with friends I pig away at the fresh bread in restaurants :)

My biggest problem is that it's somewhat time consuming. a lot of the recipes in this new book have starters and you have to let it ferment over night and then there is about 3 hours worth of stuff to do the next day. Definitely a weekend project. I'll try it out this weekend.

so far i'm lucky with this. my wife and I don't seem to have any issues with the glutens.

I do enjoy it, I just do it very little. Maybe 1-2 times a year will I make homemade bread.

I will do it for special parties or meals but that's about it. I do my best to stay away from heavily processed foods so I try not to make them part of my regular diet so I don't get to baking them often.

I bake traditional homemade white bread for my family each summer. And I make great poppyseed rolls for pulled pork and homemade Naan I grill.

There are plenty of awesome gluten free breads and baked goods. Key to to homemake and not buy premade heavily processed stuff.

A pancake place near me makes bomb GF pancakes. Better than the glutanous version :)

This simple recipe is outstanding, and soooo easy.
    -----------
    1 cup milk
    1 large egg
    2 1/2 TBS butter
    1/4 cup sugar
    3/4 tsp salt
    3 cups bread flour
    2 1/2 tsp yeast

Put ingredients in bread machine, run on dough cycle.
Spray a pie plate with Pam.
Dump dough into pie plate and spray with Pam.
Let rise until pie plate is full.
Bake at 350 degrees for 20 minutes.

Just calls for all purpose flour. It's really simple, just needs to sit over night.

I do have some costco brand organic flour that looks like its close to what the author wants.

    from the website you linked...

Although I will say that in our house, we make a valiant effort to make sure the all-purpose flour we do buy is

I bake almost all of my bread during the winter months. I've got my own sourdough starter that I keep, too. Tastes SOOOO much better than the storebought starter packets.
