    See, I was going the 'better safe than sorry' side.

    I know trich is basically unheard of in the US nowadays, outside of wild game.

    BUT, since this is wild game I'm using, I don't know the risk, SO for try 1, best take it easy.

    I'm doing some reading this week in venison temps for exactly that reason. The burgers were damned tasty, but I could tell they were on the high end of the temp scale.

    Sillier question.. have you considered canning at home? I just made spaghetti and meatballs the other night and used our last jar of canned tomatoes. I think they were canned with yellow onion and possibly some garlic but I don't recall seeing any garlic, to be honest.. anyway, I opened the jar, tossed it in the blender to make it a sauce consistency and seasoned it with salt, pepper, italian herbs, garlic and onion powders and then put a small can (maybe half pint?) of sliced black olives into it, with half of the olive brine. Then I let it boil the water out for 20 minutes or so and it turned out pretty excellent. Nothing fake, nothing unnecessary (sugar, among others), and super cheap.

    I am so trying this

    Probably going to start next year actually. With the whole 'divorce, lose everything while moving cross-country and being unemployed' thing last year *sucked*, this year is about getting things back in order. I've already got some space out behind the house that I'll start my garden in next spring, this summer I'll be prepping it , checking the soil, planning boxes/watering/etc

    Anybody got any suggestions for Steak'ums? Besides variations of a philly chessesteak kind of thing? Wife bought a box of them, and I usually cook them with onions and 'shrooms then cover with provolone, but looking for something different.
