hey there just got my Tacoma TRD off-road double cab and wanted to put 285/75r16's on it. I was wondering if a bilstein 5100 kit would work to make those tires fit?

Based on my experience, not without a lot of trimming. I just had my 3" lift installed (5100s with OME 887 coils) I got wrangler duratracs in 285/75/16 and had to trim a decent amount. Guess it depends on the specific wheel/tire combo, but I'd bet you'll have to trim quite a bit.
