Just wondering if anyone makes wine or has made wine in the past.

    My experience's are:

2 years ago, I made 6 gallons of wine from wild blackberries that I picked at work (when I lived in WA state.) It turned out AMAZING but like a dumbass I didnt write down any of the ingredients/steps/measurements/etc.... so I'll never be able to recreate it.

Today, I'm starting my attempt at making wine from Dates. I was given 40 lbs of semi-dry dates so half of them are going into the batch of wine. Exactly 14lbs after they where topped and pitted. To the mash ill be adding be adding acid blend, pectic enzyme, black tea and I'll be fermenting with premier cuvee. 3 days in the primary, then however long in the secondary and racking.. all the recipes say to age 2-3 years before drinking. So this it's going to be a LONG time before I actually know how its turns out.

I'll post some picks in a few days when I get it into the carboy.

I left some grape juice in the fridge for a bit once. Not the effect I was looking for.
On a more serious note, I've brewed beer on and off for years and have always wanted to try my hand with wine. Maybe soon, time will tell. Dates sound interesting, I'm in.

Take one half gallon can if grape juice. Drain one cup. Add one cup of sugar. Stick in bilge, outboard the main engines for one week. Dare someone to drink it.

I'm never made beer. At my last job, My coworker made the beer and I made the wine. Beer is a much quicker process compared to wine. In a few years I plan on buying about 6 more 6-gallon carboys and having 5 wines going and have the 6th carboy for brewing. I've also made a little moonshine for myself with a homemade still when my batch of strawberry wine didn't taste good. It was delicious but I didn't get very much since my still was a POS.

My grandma makes wine from raspberries. Not really sure what the process is, but it's really good stuff, not too strong or sweet. You could try googling Bokbunja or Korean Raspberry Wine...
