Yes, it's a setting within your phone. If you go into Bluetooth settings and view your paired devices, you should be able to select a device and deselect the phone pairing (and leave the audio paired).

I'm glad someone asked this. I hate blutooth in regards to phones. It's 2016 but people still feel the need to yell when someone is in speaker. I don't want to becomes one of them. Glad to know I can disable the phone blutooth.

Thanks. I don't like people hearing both sides of my conversations, and I'm sure they don't either.

This solution appears to be an option for Android OS, but I’m not seeing it in iOS 13. Does anyone know a way to accomplish the same on an iPhone? I tried pairing the phone as an “Audio Device” and not a “Phone”, but the truck is smart enough to know it’s a phone and take phone calls away from my headphones every 1-5 minutes, which is driving me nuts. I deleted the Bluetooth profile and ran music cord-only for a couple years, but miss the convenience of Bluetooth.

An option is to active "Do Not Disturb" when driving so calls do not ring through, but I do not think that is what you are shooting for.
iOS has an option to do it automatically with the "Do not disturb while driving" option in settings.
