I wish more people would adopt these. Cheaper and easier to use FRS GMRS with better range

You're better off getting your HAM tech license. Cheaper and more capability.

If you operate a radio that has been approved for both FRS and GMRS, and if you limit your operations to the FRS channels with a maximum power of ½ watt effective radiated power and an integral antenna, you are not required to have a license. (Note that some dual-service radios transmit with higher power on FRS channels 1 through 7; these radios can be used without a license only on FRS channels 8 through 14.)

If I stay off the gmrs channels I'm alright though correct?

The question of who really cares always comes up. You don't need a call sign on those bands so it's almost impossible to enforce. FCC turned over monitoring and regulation of them to local sheriff's dept. Which means pretty much nobody.

This is as I understand it from radio guys I know. I'm barely starting to get into this stuff so feel free to correct me

Baofangs won't go down to .5 watts therefore making it not compliant for FRS.

But it does work in those bands. People do it all the time.

You're right. It doesn't. If that's of concern I would suggest not using it for such. But it is capable, it does work, it is used that way regularly and I'd be interested in seeing a case of prosecution for doing so.

Like I said I'm new to this stuff and just starting to learn. I have used my Baofeng once. But it seems like a better solution for this sort of event than CB. Every ride I've been to only half had CBs and less than half of those actually worked. FCC regulations aside, it seems way more practical for people to pick up a $24 handheld, program one channel and be ready to rock. Just my .02
