    Nice pizza :)

We are doing some smoked pizzas on Labor Day weekend. Friend and I are doing a brisket first then some of that will go on at least one of the pizzas. We have done a bunch of smoked pizzas and they are awesome.

Wife got me this kit to turn a weber type grill into a pizza oven, may take that for a spin that weekend also if I can hold out that lol.

MAN does that look GOOD. Wife and I are talking about what to do for dinner right now. What did you rub it with and how long was it on the smoker?

I used the Traeger Prime Rib Rub, but Montreal Steak Seasoning will work as well. This was a 3.5lb tenderloin.

On my Traeger, I roasted at 400' for 30 minutes, the reduced the temp to 325' until the internal temp was 128-30', removed the tenderloin and wrapped in foil for 15-20 min. it came out a perfect medium rare.

I smoked 6 racks of baby back ribs on my Weber bullet this past Saturday for a party at a friend's house on Sunday. I've had it for 6 years and only use it maybe once or twice a year for ribs. I've thought about smoking a brisket overnight but I'm not keen on leaving it going while I'm asleep. I live in a small house with an even smaller backyard so I don't have a lot of room to set up and work with. There was a big fire this summer at a house a few blocks away caused by an unattended smoker.

Two years ago there was a great sale on the big bags of Royal Oak hardwood charcoal at my local Walmart and I picked up 10 bags, thinking I would be set for a few years. Unfortunately after I tore into a few of the bags I noticed that they were mostly small bits that aren't good for burning because they fall through the grates. I figured that must have been why they were on sale for almost 1/2 off regular prices. Oh well live and learn.

When it's time to replace your grill, take a look at Traeger (Costco has the best prices, during their traveling road show). It grills/smokes and is temperature controlled. Best "all-in-one" option. My next grill will be a Primo, so I can have both to work from. YMMV
