Grist has good Google reviews 4.5

Bright, 6,700-sq.-ft. brewpub featuring a host of craft beers plus an expansive bar. Parking shouldn't be an issue unless if you hardcore wheelers are planning on parking it on the curb.

    Yes.
How far west are we talking? As long as Waze can get me there, and we're not talking two hours drive or $30 in tolls time I'm game.

its 15 min west on c470. no tolls on that stretch of 470 either.

the breweries south in highlands ranch area are just meh, you want some great craft breweries you gotta head more into denver area, then ill really give you some good breweries to hit up if you wish

I'm looking for a dinner spot, with a big (enough) parking lot, that won't be pissed if we chill and hang out for an hour or three, and allows folks who aren't 21 to participate.

is Grist a good option for these criteria? Bonus if their beer isn't awful and they brew something other than eleventybillion styles of IPA.

grist doesn't have food if i remember right. If you want to stay closer to park meadows you should seriously consider just going to parry's pizza in highlands ranch. its one of my favorite pizza joints with some of the hardest to find craft beer on draft!!
