    chances are, if a pork butt seems dry, it wasn't taken to 195F to actually melt all of the collagen in the meat. i've rushed through some cooks and taken the meat off at 180-185F... it was really tough meat and wouldn't pull. I had to slice/chop it to make it edible.

    Thanks guys. Any sugar that is refined like white or brown affects her and the migraines aren't worth it. She can eat honey though so I can try that. I can't wait to try this out.

    Isn't this true (about being brined ) only if it's a packer? Fresh butts are not brined.

    What about turbinado sugar.


    Also, interesting fact, normal brown sugar isn't really anything special. It's just white sugar with molasses added.

    It can be, but not necessarily, it can brown from not being refined far enough to remove all the molasses originally. So, yeah it's basically white sugar with molasses present. Either added to refined white, or never being removed in the first place (raw).

    Unless it's marketed as natural brown sugar, it's just white sugar with molasses added.

    I'm not sure if she's tried it but it's worth a shot. It took several years of eliminating foods to figure out the sugar issue.

    It's partially refined sugar. It's brown but isn't "brown sugar".

    Raw sugar is the one not completely refine. White sugar is refined. Brown sugar is with add molasses.

    For most things, it is very reliable. For this specifically, it is accurate.

    If it's in kryovac it has been brind. Same goes with packers and chickens. It makes the meat way safer and last a lot longer

    Correct!! If packaged like this (fresh) they have not been brined.
