    I saw were they recommend pulling them when the internal temp hits 145f. Always thought it was 165f, but that's for ground pork. I was a bit nervous pulling them at 145f but it worked out well and they weren't pink inside.

    I havent done too many, but I didnt have a digital thermometer at the time. I do now so maybe I'll try them again. about how long and temp do you cook/grill them?

    I oiled then preheated my cast iron pan on high until it was very hot, then put the chops on it. About 3-4 minutes then flipped over, turned the heat down to medium. Gets a good sear on them. Watched the temp until it got to 145f. You may need to turn them again at some point if on side starts to brown too much.

    I was gifted a couple Prime NY Strip steaks yesterday, but had previous plans for dinner. So, I vac sealed them individually and put them in the fridge. This morning, they had started to turn brown. Question... will the taste or texture be adversely affected?

    I buy NY Strips in multi packs, vac seal each and freeze occasionally. I've never had one turn brown, even after thawing. Were the steaks in the store wrapping with expiration date? Could they be something bought off the guy in the truck on the corner selling sea food and meat? Just kidding!

    check for off/bad odor but in a day vacuum sealed I think you are ok.

    I didnt freeze, I put in fridge. They were fresh cut from high end butcher.

    Im not worried if they're safe or not, I was wondering if anybody knows if the texture or taste gets whacked.

    I have had them go brown on the very outer layer and once seasoned and cooked had no difference in taste or texture.
