    I've been considering getting a nice 6 inch boning/fillet knife, I just added the Shun Classic to my list.

    You need to get paid for your foto skills. Just sayin. Composition, lighting, timing always spot on. That's a skill and skills get paid.

    Knifes? I'll stick with my 35 year old Chicago Cutlery! Add to that my wife bought me a Work Sharp last year. Me likes!

    I have 2 sets of Chicago Cutlery, original classic wood handles and brass rivets. One set have had in the house forever the other set including steak knives I take to SD for 2 weeks pheasant hunting with our group out there each year. And when I go camping. The blade on my original Chicago Cutlery 5" boning knife is about half as thick as it originally was probably my most used knife.

    Also have had a Zwilling J.A. Henckels Professional "S" Series set for about 8 years now. The pairing knife and Chef knife get the most use from me in that set. The Chicago Cutlery Chef knife leaves a lot to be desired starting with lack of weight. But will start to look at the Shun knifes now at least Chef, pairing and boning knife replacements. Between those 3 and the carving knife I already have think that should cover most of my knife needs. Have a number of odd balls already like brisket knife and fillet knives. And of course the pocket knife have always carried and has been used for everything including a pry bar.

    I hear you, and I have also lusted over more expensive knives. Truthfully it would take someone more dexterous than me to appreciate an expensive knife.

    Seriously though, that's a pretty sweet knife. I'll save for one. I have one 10" Japanese knife that I use for just about everything now.

    I could use a couple of good knives for the kitchen, but for BBQ, I have a big cleaver and a 14" slicer that I can't live without. Neither were particularly expensive and have lasted quite a bit with very minor maintenance.

    A few of you have a pretty strong knife game. Those that were posted are suh-weeet.

    In the right hands and with good maintenance most knives can be pretty decent and last some time. The cheaper will take more to keep them in line with what you need. Now I'm not saying the $10 chefs knife you get at a dollar store but I'm talking some of the decent brands. If you aren't up on techniques and such for knife usage you should check out some youtube videos, can help in making a lesser knife far more useful. My friend has a set of high end Chicago Cutlery and they are cool and all but man oh man are they expensive.

    Chicago Cutlery doesn't make high end knives, or expensive knives. I own plenty but they are very inexpensive compared to high end German or Japanese knives.
