    That's a darn nice looking ring on there. One I did last weekend was low and slow which is what I normally do. I don't normally do a whole packer though and this one is 15-16lbs so I wasn't prepared for how long it took to come to temp lol. Let's just say dinner was WAY later than I expected it to be. Was late enough that I didn't take pics and such, I pulled it, let it set for a little while and as I started carving people started grabbing. Ended up sending the point home to my cousin and gave her some instructions on how to either heat it back up or to make tacos from it using slow cooker. They took the taco method and said they were awesome. Next day wife and I did some Brisket Baked Potatoes with with the 4-5 slices we had left.

    This weekend I was doing tiling at a house we are redoing to sell so dinner was Burgers (not even on the grill, used foreman thingy) Saturday and then Taco Hell yesterday.

    Anyone heard from/know how the rest of our TX contingent are holding up? Pics and Videos I have seen are scary. Prayers are out that they are just chilin at home eating some pulled pork and brisket they made and all is good.

    Very crazy. Friends we have in Houston are flooded in. Trapped in their house. No threat of damage for them, but can't leave. They stocked up prior and have power so just waiting it out. Wife's family in Corpus bailed early to other family to stay dry. No word on their place though. Luckily here we just got rain. 8" so far but nothing compared to coast obviously.

    So far I have heard of only one of the Houston TW'ers that have gotten water, but I may have missed some.

    It's also not over quite yet, and for anyone that lives close to a waterway, the fun is just beginning.

    lve noticed a big difference where a hurricane hits. Texas everyone pulls together and a few people are killed....hurricane hits Louisiana looting goes on, lots of people die, people shoot at rescue helicopters...etc

    I did some smoked beans and cubed/sauced a shoulder for the fight on Saturday. Both turned out good, nothing left.

    UPDATE:
    As described above - used SBR and cooked for 4 hrs total - they cam out a little dry - I should have used 3-2-1 method but there wasn't a rib left so I'm calling it a win. I threw out 2 racks last time. I can't see the spray bringing anything to the table except an excuse to look under the lid...

    Next cook will be 2 racks - one with Pork and the other with Cowboy rub by McCormicks - I'll use SBR sauce for consistency - I need to get it right a few times before I go and get all funky about it.
