also dont pay attention to anything I post after 10 pm central time. I guess since those where bone in leg quarters that classifies it as stock or at least stock ish right? at any rate, my wife is cutting up potatoes and cabbage today and browning up some smoked sausage (at least that's what I think the plan was this morning before I left) and throwin all that in the crock pot for tonight

No you had it right. Technically stock would be just the bones slow cooked in a stock pot and cooked down until it is concentrated. I do that with pheasant carcasas and thighs because they have those small sharp bones in them. Normally I use my All clad multi cooker for that.

Never thought about using a crock pot but it sure enough would work! With chicken I usually put in carrots, onions and celery and technically it becomes broth then. At least that is my understanding. Either way they are both damn good IMO. I'll add cornstarch to either when heating back up to make gravy but mainly broth. Stock I normally use as a base for soups. I like the idea of cabbage and sausage with it, I've never done that.

yeah I think the starch from the potatoes will thicken it up a good bit, and I love cabbage in soups just because it winds up tasting basically just like the broth. I had some soup at olive garden called "zoupa tuscona" or somethin I couldn't pronounce and I assume this will be very much like that plus cabbage. I also am looking forward to it because other than dipping the broth out last night, my wife is doing the whole thing, which basically never happens when it comes to food at my house haha
