I've heard some people will mix it and real potatoes and it's supposed to be better. It has such a strong taste though that I'm still not convinced.

Pasta. Bread. Potatoes. I'm not prejudice love them all LOL.

Which is a problem. Once you get older the doctors start talking pre diabetes and things like that. Could wait until it gets full blown and they tell you that you can't ever eat it again. Or use those carb starches only on occasion as a treat, which I do. Well OK try my best.

Scary part to me is I see people half my age all the time getting told the same thing. Here is a good short read about a man of of Italian decent at 36 years old and what pasta and carbs can do to you. WebMD His Ac1 is 10, I get concerned if mine is over 5.

I can choke down a metric shit ton of cauliflower as long as I can keep eating pasta on occasion

Roast it. Seriously it makes a difference. I posted above how I do it but there are other ways. Also if your going to use it instead of real potatoes try putting a little bit of nutritional yeast in it although I don't do that if I am roasting it.

It took me years to accept the taste of whole milk instead of milk out of the bulk tank. Haven't had margarine in the house since the Ex left it is real butter or nothing. I'm about as traditional as you can get in most things food. Tufu and Kale? Not going to happen.

If you’re dieting or the like, I’ve found it’s best not to even try to “substitute”. It ends up making you crave the real deal even more. Plenty of my friends try to make cauliflower pizza dough when they’re cutting carbs and end up breaking the diet to get real pizza within days

    Just my experience!

In my yo-yo of weight loss/gain over the years I've found if you are craving something real hard have some of it. If you hold out and hold out when you finally break you end up WAY overdoing it. If you nip that craving at the start even just a taste of it can satisfy.

Im sure some of you have already done this... but I hadn't...

I cooked rice in the multi-cooker the other day. (I have the Fagor brand of Instant Pot). I may never cook rice in a pot on the stove ever again. Ive always had trouble getting rice to come out to the right consistency. Yellow, wild, white, arborio... all of them came out just a little off-sticky, mushy-a tad too al dente... But the multi cooker! OMG! White and wild have come out perfect so far!

Haven't done rice yet, I don't eat much of it anymore. But hard boiled eggs, Oh Yeah! A little bit faster than boiling on the stove it certainly is not instant. However they peel so much easier cooked in the IP for whatever reason. I'm liking the IP more and more now that I have it.
