Do you strip it first? Usually when I cook a neck I strip the bones and hoses out first, then lace it up with a sliced onion in the middle and slow cook it that way.

Well if you brined it you won't be short of flavor or moisture. Plus the onion adds flavor and moisture on its own. I just like doing the prep work beforehand so once it's cooked all I have to do is pull it, let it rest, and slice it up.

Gonna try out some of the pork belly saturday. Gonna salt/season the fat side and sear it then cook it in the crockpot of a layer of onions and do up some faux bbq stuff baked potatoes with some of it and do some pork belly tacos with some (and hope to utilize those pig juice soaked onions on them tacos)
my dad seems to think it might be a bit greasy, but I think if I sear it first that will keep some of the grease out of the crock pot, and I watched a few people roast pork belly in the oven and it turned out to look almost like butt, plus I think the onions will keep it off the bottom and soak up some of that grease and everything should be fine... right? fyi my dad knows how to scramble eggs and that is all
