    I always cut one inch gashes across my butts, it simply gives you more surface area for more bark. Also seems to speed up the process by a small amount.

    Going to try and give Starwberrycello (for the lack of a better term) a whirl.

    The limonchello I did called for fruit rind and alcohol to be put in a zip top bag or vac bag for SV bath which I did with no issue but changing things up a bit for this one and used a Mason jar.

    Tools needed:

    1 clean quart jar w/ lid
    1 bottle high proof neutral spirit
    1-1/2 cups sugar
    4 cups water
    Fresh Strawberries

    1. Pour the bottle of alcohol in the quart jar.
    2. Stem and slice the strawberries (I use an egg slicer). Slice enough to fill the jar almost the entire way. About a cup and a half.
    3. Put on the lid and into a 135* SV bath for 2 hours.

    While the strawberrycello is cooking time to make a simple syrup

    1. Mix 1-1/2 cups granulated sugar with 4 cups of water.
    2. Put on stove over low heat until all the sugar is dissolved.
    3. Set aside and let cool

    Note: You want to save the neutral spirit bottle for housing some of the final product. To easily get the label off put the bottle in the SV bath for a couple of minutes to soften the glue and the label peels right off.

    This is about 51 minutes into the 2 hour "cook". The strawberries have lost a lot of color and the infused liquid is a brilliant red.

    Out of the SV and ready to filter. 2 layers of coffee filter in strainer over a Pyrex dish

    Here are the strawberries devoid of beautiful color as it now in the infuses liquid.

    Packaged and ready for refrigeration. It came out pretty darn good although next time I'll probably split the batch and use double or quadruple the strawberries.

    My mom is a strawberry-aphile so the bottle will go to her. The quart will stay here for sampling.

    It’s like having Dutch Ovens, only bigger
    Will phase out the gas grill once it finally rusts out, tired of buying them every 2-3years and not lasting, rebuilding cost as much or more than replacing

    Nice! About an hour ago my 26" showed up! It's been a good couple days - got my new bag of pellets and my charcoal chimney in as well. We have to go to a housewarming party tonight, so I'm just going to grill some burgers.

    Is that a 22"? I already have an 18" and wanted to go bigger. I unpacked the 26" and, holy cow, it's bigger than I anticipated!
