Canning tuna yesterday so relegated all lunch cooking outside. Reverse seared some flat irons and smoked some mac & cheese (one tin with bacon) and some pork n beans. Dumped one can worth of sugary sauce out & replaced with whisky. Added bacon. All good!

Spare ribs are off, cut, and vacuum sealed for lunches.

I ate one. Had to. Pepper forward and very tasty! I'm usually a sweet ribs guy.

Reverse sear in progress for the porterhouse!

The wife and I have been grazing all day, so we didn't do a proper plating of our meal - we just sliced and snacked at random. As a result, I failed to snag a good picture. It sailed in to medium territory a tad as the Weber picked up a little heat unexpectedly. Still on the bottom side of medium or the top side of medium-rare. The filet portion was fantastic. Here's all I got.

I love to grill. Beef is my favorite but I'll grill anything. Except pancakes. That's messy.

Even pancakes can be done, but bacon always seems to find its way on to my grilling griddles instead. It does give a great surface for cooking cakes afterwards though.

Although I am more likely to cook scrapple and eggs in the bacon grease than pancakes.

Should chop up some of that bacon and add it into the pancakes for cooking. :)

I haven't smoked any pancakes as of yet. Not sure how that would be, might not be that great. Who am I kidding I may try it higher heat at some point.

Like scrapple they are a great carrier for Maple Syrup. Real Maple Syrup.

    scrapple and syrup.jpg

6 more days (and counting) I will be back in Lutsen and replenish the supply.

Pure Maple Sugar is also key to making my bacon. And to inject into turkeys before smoking melted with some OJ, butter and honey. Bay and thyme are optional but good in the mix.

    Roti Turkey WSM Injection.jpg

Also goes well sprinkled on pancakes then topped off with Maple Syrup :anonymous:
