Food Smokers and Smoking Tips/Tricks/Techniques

Well she is done. Just in time for Football Sunday....

 

Pork loin stuffed with my homemade Italian sausage and wrapped with rosemary
Slow rotisserie

 

Prepping some flank steak tacos either making it tomorrow or for Tuesday. Should come out good with my marinade

Bourbon/whiskey, soy sauce, brown sugar, black pepper, garlic and onion powder, Cheyenne pepper.

Wings from Friday and steaks from last night. Pork belly mac.

 

Funny, we did Wings on Friday and then last night we did Reverse Seared Steaks (T-Bone), Baked Potato and Homemade Mac n Cheese.

 

Need to get them wings in the cook off .

I did a porterhouse again last night. It was the second of those two massive ones I got from Costco. Kind of uninspiring, though. Biggest struggle was getting a roaring fire going for the sear, believe it or not. I think some of my coals got damp and they weren't putting off the heat I needed/wanted. Taste was good enough, I suppose.

I need to cook something big soon. It's been a while since brisket, pork shoulder, multiple racks of ribs, or something along those lines.

 

Have you tried searing directly on the coals? Works surprisingly well

Ya I'm in a big time mood to smoke something bigger lately. Need to order some more pellets here shortly. Thinking maybe a brisket or two in the next couple of weekends.

I haven't found that site to be negative really, at all. Even when I didn’t know my ass from a hole in the wall, guys were really understanding and eager to help.
