jambalaya recipe

    Jambalaya

    - yellow onion

    - green bell pepper

    - 2 sticks on celery

    - green onions

    - 1 pound pork

    - 1 pound of sausage

    - 1 pound of skinless boneless chicken thighs

    - beef bouillon cubes

    - garlic

    - creole seasoning

    - hot sauce (crystal)

    - kitchen bouquet browning & seasoning sauce

    • start with half a cup of vegetable oil, sear pork (turn heat to low for 25 minutes), add chicken and sausage (raise heat (cook ten minutes)), remove meat and set to the side, add vegetables, add table spoon of minced garlic, preheat oven to 300 degrees, (add 1 teaspoon of salt, 1 teaspoon of creole seasoning, 3 beef bouillon cubes), sauté vegetables down for 20 minutes, add 3.5 cups of water, add meat back in, 2 cups of rice, add 1 tablespoon of hot sauce, 2 tablespoons (1.5 tbs) of kitchen bouquet browning & seasoning sauce, bring to a boil, put lid on and place in oven for 1 hour, remove and let sit for 5 minutes

    The Works.
    Here's mine-
    1 lb linguica
    1 lb chicken
    1 lb shrimp
    1 of each red, green, yellow bell pepper
    1 jalepeno
    1 bunch celery
    1 lg onion
    1 bunch green onion
    1 lg can diced tomato
    1 head of garlic chopped
    1 beer
    1 c rice
    salt and pepper
    butter

    Cook all vegetables, minus green onions (save till the end). Set aside. Peel shrimp, devein if needed. Cook shrimp peels in veg oil till browned. Add the beer, cook down a couple mins. Drain. Save the liquid, toss the peels. Cook linguica. Add chicken halfway through linguica. Add rice halfway through chicken allowing to suck up the juices. Add shrimp stock. At this point I melt a couple tbs butter in a seperate pan. Add garlic. Cook. Add shrimp. Cook until firm. Add s&p. Back to the main pan, add tomato and their juices. When back to a boil add veggies. Stir. Add another beer or cup of water may be needed. Add s&p. Maybe a tsp of dried oregano if desired. It helps. Remember a little oregano goes a long way. Cover and cook 15-20 mins until rice is done. Rest 5 mins so rice absorbs liquid. Stir. Add shrimp. Add green onion. Stir and serve. Even better on day 2!
