    I once bought a very young goat to butcher. That lil m-efer was awfully cute. Tugged at our heart strings as my brother and I handed the .22 back and forth.
    Pretty sure the goat farmer was convinced we were both retarded.

    I love lamb meat.

    Here. This is a northern China thing. It’s a sesame green onion skillet bread. There were no household ovens back in the day. I’m trying to perfect it. Turns out a cast iron skillet is not the best tool for the job. Stainless steel is the key.

    Made lasagna bolognese yesterday. It took forever but turned out great. Wife said it's the best lasagna she's ever had.

    I prefer mutton for exactly that reason. I would rather give them a chance to grow up and enjoy life for a while. But I can never find mutton anywhere - it is always lamb.

    Stickers and not enough wax
    Because they slaughter the male lambs, and allow the ewes to grow up and become wool producers. Unlike cattle, it's more profitable to eat the boys young instead of making them steers. You only need one good ram for the ewes, and lamb chops are so much more tender (and therefore have more value) than mutton.

    I made a bechamel sauce for this one and paired it with parmesan. And the bolognese was cooked with milk first and then wine, reducing them both all the way. I think it just made the flavors that much more intense.

    especially lasagna, fresh is good but overnight the water/spices flavor is absorbed and makes it even better the next day. Well thats my theory;)
