    Oh I don't disagree at all and have said the same thing. On here. Heat and meat, doesn't matter what or how you do it. Certainly not knocking pellet smokers. My WSM with an ATC is the basically the same except fuel is already supplied, it is the forced draft blower that is the variable used to maintain the constant temperature.

    Brisket started going up once the TV food shows started doing Texas style BBQ almost 10 years ago. Then there is that Aaron Franklin fellow, he gets a fair amount of the blame too.

    But last couple of years people have discovered pellet poopers in large part to due to Traeger pellet smokers and advertising. When their patent ran out lot of others jumped in the market. Many people that would not spend time babysitting a traditional smoker now are smoking meats. And increasing the demand, with a huge spike recently. People are complaining that they can't get a packer brisket at Costco in a lot of the country now, just flats. Supply and demand, isn't just Costco. And pork bellies. Pork belly at my local butcher shop has doubled in price over the last 2 years. Corn and bean prices have tanked last couple of years so it sure isn't feed prices causing it.

    That is what many on different forums are saying and I see it in this area too. Brisket is hit or miss at Costco here and used to always have them including prime grade. And pellet smokers have taken over the grilling section of most stores from Home Depot, ACE, to Fleet Farm. All in the last couple of years or less. More people are smoking and with the ease of use people are actually using them.

    I like more cowbell, but think we need more cows :D

    Ya I’ve noticed more and more pellet smokers at the big stores. I’m happy in one aspect Rural King has my pellets cheap. :)

    I’m hoping my next pellet smoker I can actually build it. Will be along the same design lines as the one Maner and Bryan are doing just pellets and bigger. I want to make it so I can open and close certain sections depending on the size of the cook. That way I’m not wasting fuel for a smaller cook.
