I have a frozen 2.5 inch thick bone-in ribeye. Can I sous vide from frozen, and for how long if so?

"cooking time" just has to start when the meat reaches water temp.

So how do you figure that out seeing as it's vacuum sealed?

Frankly, I just sort of guess with the help of an IR thermometer. An extra hour or two added to the cook time doesn't matter much.

Still waiting on the Nano from forever ago... emailed them again a few weeks back to let them know I moved and needed to update shipping address and they said they are in shipment processing and can't change it. SO they should be coming soon if anyone else pre-ordered one.

And in my situation they said once I get the shipping notification, call them and they'll mail another one to my new address. I asked about the one going to my old address and they said don't worry about that one. Hopefully the new owners forward it to me :fingerscrossed::fingerscrossed::fingerscrossed: I'll have to let them know it's coming when the time comes.

I've had things go missing in the mail and the company send me a new one. Then the original one shows up, and it gets saved as a Christmas gift for someone.

Sous vide arm roast at 135° for 30 hours. It was almost like a rib roast. Simply amazing

Has anyone tried using your sous vide in the bed of your truck while you're on your way to go camping? You would then finish whatever meat on a campfire or grill when you get there. I haven't used the outlet in the bed of my truck and am not familiar enough to know if it would last the hour or two of driving to get to wherever I'm going.

Would take a lot of water to fill up the bed of your truck. :)

Lol. Not too much if you keep it below the outlet. I have an older igloo I cut a spot out on top for my sous vide. I thought I could just strap it to the side to keep the cord from going everywhere and try to minimize the amount of water that would come out of the cooler. Its a thought, I'm not sure if it would work or not.

    A) Not sure leaving a pot of cooking meat unattended in the woods is a great idea.

    B) Bed 120 outlet is only rated for a few hundred watts.

C)Your truck battery will also die before said meat is cooked, presumably.

So, in summary, you have everal things working against you on this endeavor.

Edit: just saw "while driving " so disregard A) and C). B) is still valid, however and I'd add D) Driving around with a pot of hot meat water in your bed is sub optimal.

I think the big thing you would have to look at is how many amps it pulls at full load. If it’s ever too much you will pop the fuse.

Reverse sear sous vide tenderloin for my belated birthday dinner tonight. Baked spud, green beans, hollandaise, crab meat on top of the steaks. Quite tasty but I'll skip the crabs next time. I do that every 4th or 5th time I do these and every time I decide it's not really worth it for time/taste/texture. 120 in the sous vide for an hour, smoking hot cast iron skillet to sear. SO GOOD!

On edit: that's a 12 ouncer on my plate btw. Spent the same amount on the steak/spud/greens/crab as we did on lunch today at a local wings joint sharing a caesar salad and an order of chicken strips with a couple of pints. The $30 bottle of wine pushed us over the eating out lunch but man, that's some excellent local Syrah!

I recently bought a cheap sous vide on Amazon to maintain mash temp so I am glad I found this thread for future cooking ventures with this thing.

This is the one I bought:

This was my first attempt at anything sous vide... It isn't fancy but it worked and the results were nothing short of amazing
