    this is from the chipotle batch i made a couple weeks ago. i had 10-15 red jalapenos on the plant and a couple of green ones. i chipotled the red ones and did the green ones in it for flavor depth.

    it's the darker bottles. the one on the far right is from my previous batch to compare color. that one was all red jalapenos that weren't chipotled.

    Experimenting with my last batch of hot sauce. I added a little more sugar than usual and a tbs. of sesame oil. Not overpowering but a great compliment to the sweet and heat.

    Chipotles are red jalapenos that have been smoked with pecan wood until they are dried out.

    You leave the peppers on the plant until they turn red. I cut off the stems and split them down one side the help them dry faster. Smoke them really low with pecan wood, like 150-175F. You want them to dry out, not cook. After they are dry, you can just stick them in a hat and use them as needed in recipes. I usually grind them up to make chili powder, but figured this would be better. I didn't let these get completely dry since I was just going to make them into hot sauce, but they got the same flavor.. Just not the same preservation as fully dried ones but that doesn't matter since they aren't sitting in my pantry.

    Thanks for the info! None of mine got to red this year but maybe I can find some at the store and give it a try.

    I make my own sauce every year. I use Carolina Reapers that I grow and damn is it spicy.

    I missed out on a different forum. They were doing a fermented hotsauce trade/buy. Maybe next year I'll get in on it.

    House made Chimichurri Sauce. Parsley, cilantro, oregano, jalepeno with red wine vinegar and a lot of garlic. My current go to sauce.

    I have developed a taste for this creamy Jalapeno Sauce after the guys I worked with a while back introduced me to it.

    Took a while but i found a good base recipe at the following link.

    After a couple times of making it I changed it up a bit. by adding some Mexican oregano, and using an avocado in place of the oil.

    she's all stock
    i used this recipe but substituted 5 habaneros for about 30 hot Indian peppers. turned out amazing (those are the peppers in the background)

    Pretty good crop this year considering my yard gets no sun. L-R Fresno Chile, Hot Banana, Jalapeno and Dragon Pepper. Nothing fancy. White vinegar, garlic and sugar.
