    Okay...so one of the things I miss on this low carb journey is bread. I experimented with a dinner roll recipe at Thanksgiving. It was pretty awesome but still a little dense. Tonight I made a slight adjustment to the recipe and nailed it! Rolls are light and fluffy and sit at 5.5 carbs. Buns are 8 carbs. Tonight I will enjoy a Chick Fil A chicken sandwich on a low carb home made almond flour bun! Can’t tell you how excited I am!

    My wife was looking at ads on Thanksgiving and came across a sale on Instant Pot pressure cookers and air fryers. I have both of these already, albeit not the Instant Pot variants, but both have some issues that I think the ones that were on sale will remedy.

    The pressure cooker I have is an 8 quart and works well enough but the Teflon is starting to wear off. For $90 (regular price is $190) for the 10 quart Instant Pot, it was hard to say no.

    The air fryer I have is small and is a pain in the ass to clean but we use it frequently enough to justify purchasing a better, larger one. The new one has multiple trays and most importantly is dishwasher safe.

    The air fryer is supposed to be delivered today and the pressure cooker on the 9th.

    What's the recipe?
    I ditched my air fryer last year. Just wasn't using it enough. The IP though, I use the heck out of that thing. Yesterday I made turkey stock in about and hour. On the stove it would have been five. Love it.

    1 cup cold water, set eggs on the rack. 5 min pressure cook on high, natural release 5min, then release remaining air quickly, 5 min ice bath.

    We have some breaded chicken from Costco that my boys and I like but 1) we can only fit 2 in there, not 3 and 2) because of how much of a pain it is to clean, my wife can't use it because it's coated with breading and she can't have wheat. This new one should fix both of those problems.

    As for the pressure cooker, I end up mainly using it for Indian recipes - palak paneer, butter chicken, tikka masala, etc.

    We use our Air Fryer and Instant Pot all the time. We actually just bought a bigger Instant Pot and are looking for a bigger Air Fryer also.

    What size did you upgrade to? The 8 we had was technically enough but the 10 will make it that much easier/faster to fold in 3 pounds of spinach. :laugh:
    I can report back on my new one when it shows up if you'd like. :)

    That would be great. We like the one we have right now but it's just needs to be bigger.

    We went up to an 8 from the 6. We thought about the 10 but counter space is a premium right now. :)

    This is our new go to Christmas Dinner. The kids as they got older voted to use the turkey differently. So we did. Ours is ham and turkey with Swiss and cheddar. We make it triple decker and serve it warm with maple syrup au jus.
