    The wife is going to try thumbprint cookies at some point. All of the recipes she’s checked out say coconut flour is the way to go

    Oatmeal Cranberry Orange Walnut cookies in the oven

    Not a fan of raisins and the cranberry-orange combo is amazing.

    3/4 cup vegetable shortening
    2 eggs
    2 tsp vanilla
    zest from 1 large orange

    3/4 cup sugar
    3/4 cup brown sugar
    1 tsp baking soda
    1 cup GF flour
    1 tsp xanthan gum
    1 tsp apple pie spice
    1/4 tsp salt

    1 cup dried cranberries
    1 cup chopped walnuts

    2-1/2 to 2-3/4 cups GF rolled oats

    Combine the eggs, shortening, zest, and vanilla in the mixing bowl. In a separate bowl combine the sugar, brown sugar, baking soda, flour, spice, salt and xanthan gum. Gradually add the dry mix into the wet, scrap the sides of the bowl as needed. Add the cranberries and walnuts. Add in the oats last, sometimes the dough gets too dry so add the last 1/4 to 1/2 slowly, stop if the dough gets too clumpy.

    Preheat oven to 350. Lightly grease the cookie sheets with a little shortening. Roll the dough in your hands to form 1" diameter balls. DON'T flatten them. Bake for 15-17. Will yield 24-30 2-1/2" cookies.


    They're cooling now, I'll post up some pics later on

    not a scotch drinker so i wouldn't know. but they're pretty freakin amazing just on their own or with a cup of hot tea though. i love the cranberry orange combo and the apple pie spice adds just a little extra flavor.
    if I make them for the office or something most folks grab them thinking its just an oatmeal raisin cookie - there's always tons of questions about what, exactly, is in there. they can't put their finger on the exact combo

    found this stuff in the store a few weeks back, gave it a try over christmas with a turkey. the thickening action is a little delayed so I had to dilute everything later in the process as I had added too much early on and things were looking more like jello than gravy. which led to bland, watered down gravy. if I had been a little more patient I think things would have turned out better. Overall a decent option, just need to be a little more cautious when sprinkling it in

    Tried my hand at homemade flour tortillas. Didn’t quite roll them thin enough — otherwise delicious! I used GF Jules’ all purpose because I had some, but I’ll try them again with King Arthur’s.

    Grilled cod, roasted corn/tomato/avocado salsa, and spicy crema with some bird’s beak powder I made in the fall.

    Howdy y’all. I’m not necessarily strictly gluten free (I still can’t resist some big macs for lunch occasionally) but my partner has celiacs so I eat 98% GF. I saw this thread at one point over the summer but forgot to follow it. Thanks @Beef Nachos for reminding me it exists.

    @MTgirl , I wish I had seen this is December, my fiancé and I made some amazing GF sugar cookies. They actually were shapeable and held together when baked, I was amazed.

    Tonight we tried some “bFree” pitas from wally world. I was extremely pleased with them. Once toasted they didn’t crumble and fall apart and tasted real good. Would buy again for sure.

    They exist now! They came out a few days ago. Her Mom found them at a Krogers in Ohio and my sister found them at a QFC in Western Washington. They haven't made it to our town as of two days ago though. We did try the great value GF "chocolate sandwich cookies" and they were decent, but the Glutinos are better IMHO.

    "I use this recipe but use cup for cup GF flour. King Arthur and Bob's Red Mill work the best in my opinion. Warn them that a full recipes makes SO MANY cookies, so I usually half it unless I need to make like 10 dozen haha.

    It is much easier to roll after 5-10 minutes out of the fridge because GF. And def use flour not powdered sugar to roll out."



    Soft Sugar Cookies

    Ingredients
    • 6 cups sifted all-purpose flour

    • 2 tsp. baking soda

    • 2 tsp salt

    • 2 tsp. baking powder

    • 2 cups sugar

    Directions

    Mix these first five ingredients and then cut in with pastry blender (like pie dough) the following:

    • 2 cups butter
    Set dry mixture aside and blend together, mixing well, these three ingredients

    • 4 eggs

    • ½ cup milk

    • 4 teaspoons pure vanilla
    Add liquid mixture to dry/butter mixture. Chill slightly (at least one hour).

    Roll out on lightly floured surface and cut with cookie cutters as desired. A cookie cutter dipped in powdered sugar is preferable to a cutter dipped in flour as too much flour makes a tougher cookie.

    Bake at 325˚F for 8-12 minutes – insulated cookie sheets lined with parchment paper are preferable.

    Cool completely on wire racks, frost and/or decorate as desired.


    Helpful hints:

    Handling the dough as little as possible makes a tenderer baked cookie.

    Dividing the dough into small portions and wrap with Saran wrap makes the rolling and cutting process easier. This way the unrolled dough stays chilled until needed. If the dough becomes too warm from the ambient temps in the kitchen or handling, chill again.

    Cold cut cookies hold their shape best for baking.

    Baked cookies will freeze beautifully for up to a month if desired. There is no real need to defrost prior to decorating.
