    Well... in a shitty turn of events I’m now cooking for one. I have quickly learned that supermarkets don’t have a lot of smaller portioned stuff.

    my question to the people that are cooking for one, what are some recipes that you enjoy doing??

    I still cook for 2+ and toss some leftovers in the freezer. Cooking a single serving meal everyday gets old and burns a lot of time. Cooking a couple 2+ serving meals means you can have good food for a week with only 3-4 days of cooking.

    I was put in this situation a year ago and still haven’t really figured it out. Worst thing about being single. I would say portion your meat and adjust portions for recipes. Cut down everything by half or even in quarters. It’s tough though best of luck.

    Bacon, eggs, sammiches, even the "family meals" can make it easy for left overs for lunch the next day.

    I'm not talking some fancy meal prep shit. Just cook Monday, toss the extra serving in the fridge/freezer. Cook Tuesday, toss one in the fridge/freezer. Whatever days you don't feel like cooking you now have covered.

    I cook for one when my son isn't home. divorce sucks but that's another story. been doing this for 10 years now so I have some suggestions on how I approach this.

    Meat: buy in bulk, freeze in portions you'll need when cooking for one. Think this is obvious but wanted to mention.
    Veggies and fruit: I go once per week for fresh veggies/fruit until it's garden time in spring/summer. Then I pick what I need.

    Homemade chicken soup/chile etc - no recipe to offer as I just throw a bunch of stuff in there and season to taste. My point? Freeze what you don't eat and make it so all you have to do is make corn bread.

    it's friggn cold today so I'll stop at the hot soup/chile. But I'm sure others will be along with some help. I have this shiat down to a science for me...and it helps when camping too.

    A lot of meals you can cook up and if you have like a vacuum sealer you can put into bags and lay those flat in the freezer, doesn't take up a bunch of room and you get multiple meals that are easy to reheat (you can boil in bag or use Sous Vide if you have one). 1 or 2 it's honestly hard to cook for.

    For over a decade meal prepping for the week is great. Might not be for everyone eating the same thing day after day but it's it good never really been a problem. Or by the time you get tired of it you're ready for a new meal to make for the next week. Usually make two meals for the week, lunch and dinner with some random snacks in between.

    I am of Lithuanian descent and quite fond of that particular culture's cuisine. Koldūnai in particular are my go-to make-in-advance food. They are pretty similar to pierogi, I make mine with a filling of minced walnuts, onions, mushrooms, and Beyond Beef (I am a vegetarian, but you could easily substitute in any meat of your choice). The dough is made with flour, water, vegetable oil, and salt (some people use an egg in there as well, but I never have).

    Once you have formed the dumplings, you can either bake them or boil and/or fry them. If baked, they are good with the barbecue sauce of your choice. If boiled and/or fried, I eat them with sour cream and dill.

    I highly suggest investing in an air fryer if you don’t have one. Basically a mini oven and perfect size for a one person meal

    Egg sandwhich on an english muffin- throw some avocado in that bitch or spicy sauce, cheese- bomb!

    honestly i always try to have rice in the fridge cause then you can pair it with anything and have a meal. Rice and beans- boom, easy meal. (I love rice and beans) some cheese, chipotle cremosa- bomb!!

    what else let me think...hmm...

    i usually have a light dinner and I end up eating hummus. Hummus is so good and easy, i’ll have it with bread, carrots, crackers, delicious and easy

    Another pretty easy thing to throw together is a charcuterie board, cut up some cheeses, and throw in some cut up fruit like blueberries, orange slices, or grapes, some veggies like cherry tomatos, some pickles or pickled peppers, some prosciutto, some crackers or bread- easy and delicious!

    also progresso lentil soup is really good if you havent tried it

    oh another good easy one is english muffin pizzas!! There we go started and ended with english muffins. I’d also suggest you search “cooking for one” on youtube, probably find some good ideas
