    There’s one in Albany off I5 and there was one one in Eugene but not sure if it’s still there

    also Human Bean in Medford makes a good cup

    There's a little pink coffee shop in the middle of a parking lot somewhere in Portland Oregon.
    I saw it as I was leaving a distillery and wow, I was more impressed with the server than the coffee that's for sure.

    Aside from the Portland area “hot” coffee carts, Corvallis has some good shops. Coffee Culture is one of my favorites

    Out Bend way I'm a big fan of Megaphone and Still Vibrato. They have Megaphone beans a few places, Spoken Moto is pretty cool although it's full of tourists like 24/7.

    Portland: Proud Mary, Coava, and Upper Left. Barista has one of my favorite mochas. Case Study has great flavored drinks, and Tov is a treat for something a little different. Portland Ca Phe has tasty Vietnamese-sourced coffee also.

    Eugene: I'm not super up to date here but I've always been a fan of Wandering Goat.

    Coast: Sleepy Monk in Cannon Beach.
