I've got a 2019 Tacoma SR5, and I'm currently running a set of Cooper AT3 4s tires on standard 16" wheels. I've thinking about a little more aggressive look, with maybe a larger wheel & tire combo, but don't want to put any lift on the truck and don't want it to ride like a log wagon & be noisy from ultra-aggressive tire tread.

My question is: what it the largest wheel/tire combo I could run with a stock setup & not have the tires rub at all?

Probably a 31” tall tire, like a 265/75R16 or 265/70R17. Some guys say they can run 32’s with minimal trimming and adding caster to the front end. Wheel offset comes into play as well, I believe more negative offset past 0 will make tires run on hard turns.

    Not to nitpick but a 265/75R16 is usually considered a 32 (it's 31.6) the stock 265/70R16 typically referred to a 31 is 30.6
Also many folks on this forum claim going with 265/75R16 is not a problem with the stock wheel ~+25mm off-set or a least some positive off-set (even 0 which I am skeptical - but OK if they say so) - i.e. no rubbing. But yes once you start changing wheels and wider tires for that matter off-set is a big factor - negative off-set makes the wheel and tires poke out more which for some reason people like but then you may start dealing with rubbing and all that brings with it (cutting, castor and so on - you are right about that).
