If you want it "always on" I'd go right off the battery w/ it's own inline fuse.

    similar to.....
    61rsDSket1L._AC_UF1000,1000_QL80_.jpg
    Red goes to battery.
Black goes to battery (or grounded to the body somewhere)

Varies from truck to truck, but with the key off get out your voltmeter and test some of the red and black wires at the fuse boxes under the hood and behind the interior panel by the driver's door, depending on what's closest to your project. Disconnect battery before doing any actual work.

Most models have always-on accessories in the center console (cig lighter for example.)

No. it won't cause problems, unless you leave something plugged into it and drains your battery.

    I have a dumb question...
Isn't there already one in the truck?

Many people have taken that cig lighter wiring apart, and hard wired it to their battery with an inline fuse. Don't try to tap into an always power ON fuse circuit for a fridge. Definitely go straight to the battery with the proper fuse/wiring. Or use the cigarette lighter for the power source as designed.

    That's all you need.

Where do you plan on putting it because that one doesn't look like it can be mounted anywhere.
Probably just going to hang freely.

Something like this you could drill a hole and mount it.
Dongge Cigarette Lighter Socket Extension Cable https://www.amazon.com/dp/B07TTNF118

Those might have to be cut and spliced on the adaptor side, to be able to feed it through the firewall.
