I’m having issues when pressing the gas at approximately 2000-2500 rpm. V6 manual transmission.

In what gear? Or all gears?
    On flat ground?
    On hills?
Can you repeat it in neutral, truck not rolling?

We kind of need to know what load is on the engine when this happens. The more info we get, the better we can help.

Ok all gears, just lightly accelerate, just holding in that rpm range. Flat, hill doesn’t matter same thing, and not in neutral only when driving. Stops when I release gas pedal. Recently had transmission replaced with one from ‘15. This started about 3 months later.

First I would check the universal joints in the driveshaft.

For a proper inspection you need to remove the driveshaft and manipulate each joint by hand, looking for extra looseness or tightness. Also inspect the center support bearing.

So I’m gonna go ahead and just replace all 3 u-joints if I have the shaft out might as well just do all 3 I figure. Are all 3 the same part ?

If you're going to throw parts at it. Throw all the parts at it and include a carrier bearing too.

I'll have to look for part #'s and get back to you.

Ok so took drive shaft out today, had to cut off the bolts but I definitely have a bad u-joint at the rear, just waiting on parts to be delivered for reinstalling. Thx again folks, will update when all done but might be a couple weeks as I work away.
