Cajun Boiled Peanuts!

    Ok Guys so I'm working on my recipe for Cajun Boiled Peanuts. I wanted to throw out there what I'm working with and see if anyone has any other Ideas.

    First off I'm working with a crock pot and I'm Cooking them on high for at least 18 hours and I'm using Green Peanuts. today I'm adding some jalapeno peppers to the mix to try and bring the heat up a little more.

    I don't normally Measure the ingredients that I add so these will be approximations.

    2 pounds of green peanuts
    1/4 cup of Salt
    1/2 cup of red chili flakes
    1 tablespoon of Cayenne pepper
    1 tablespoon of Chipotle pepper
    and a cup of Sriracha sauce

    Then I fill the Crock pot with water and let it go. I usually have to add a fiew more cups of water after the 1st 12 hours

    Like I said the Jalapeno peppers are new for this attempt. My peanuts have come out tasting really good in the past but not as hot as I would like them. I use a crock pot because I think it is safer than using a pressure cooker but I can't help but feel that I would get better seasoning penetration If I used one. Plus they would be cooked so much quicker.

    Well thats it for now. I will take another picture when they are finished tomorrow and let you know how they came out. And if any of you have any boiled peanut recipes that you like let me know.

    I tried boiled peanuts once and spit em back out. Guess I live to far north to acquire that taste for them although Cajun is yummy.

    i love boiled peanuts - especially the spicy ones... i've only found one convenience store in DC that sells them

    i've made them a few times but never got crazy with it... that looks like a really good recipe. make sure you show us the final product!

    My wife loves them, I can't do it. It's a texture thing. BLAH lol Once again like coffeesnob said guess being from the north I can't do it while my wife is a southern girl and loves them. :)

    Well fist off I want to apologize for not getting a picture of the finished product. While they did come out with the heat that I was looking for unfortunately they were very sub par green peanuts. I would say 2 thirds of the peanuts after you shelled them were no larger then a grain of rice. It was very disappointing and there for a lot of work for little reward. When I go back to the market this weekend I'm going to pick up some plane Raw Peanuts and hope for a better outcome.

    Absolutely love boiled pnuts being from GA. But I don't go for too much heat in any food, a little powdered cayenne in the brine would be my limit.

    One question, are you letting them cool down in the brine all the way to room (or fridge) temp after boiling? That is the only way to get the liquid to soak through the shell. Around here, there's usually some brine that drips out every time you crack one open.

    You can tell when they get saturated, as the hulls will turn darker and sink to the bottom.

    And are they actually simmering for 18 hours? I've never gone over 2 or 3 hours max steady simmer. You want the peas to still have a little bit of firmness and texture. Too long = soft and mushy.

    By the way, you will probably find the good fresh green ones hitting the stands maybe mid to late August or so.

    Ah, one of my favorite snacks! I could eat those for days on end. did you have to cook them so long because the crock pot doesn't get hot enough, or were you turnng it down to get some more time to soak up the flavor?

    I usually do mine on the stove top in in a giant pot, or outdoors on a propane turkey dep fryer. with that kind of heat, it uaually only takes about 4-5 hours with green peanuts.

    I generally do "chipotle" peanuts, which are very similar to your cajun ones.

    If i ever want to turn up the spice on mine (for when the fiance isn't around to eat them), i put a couple drops of habanero concentrate in it. really wakes it up. I've also had good success playing with different amounts of liquid smoke in the mix.

    haven't tried it yet, but i really want to do a batch of roasted garlic peanuts.

    yes I let them sit in the brine and let it cool down before I eat them and then I leave them in the brine and only take out a spoonful at a time.

    I've found that Just Raw peanuts take a lot longer to cook and get soft than the green peanuts do. That being said I think the green peanuts were a lot more accepting of all the spicy things I was putting in there the raw peanuts seem to not want to absorb so much of the heat.

    Yeah the crock pot could never get hot enough to cook it in 4 hours and I do think that the longer it sits there cooking slow the more flavor should be able to penetrate.
