This morning I made smoked duck breast bacon, eggs over easy with Cajun seasoning on top of a cake of pan fried polenta. Holy hell!

OP, polenta is easy as hell. Can eat it breakfast style like I did, or top with chili or marinara sauce. Or you can have chicken with it, shrimp, really damn near anything. I use 1 cup of polenta meal and add 1 can of chicken stock and use water for remaining liquid and teaspoon of salt.. Stir and bake for 50 minutes. Pull out and stir, re bake for 10 minutes and I add a tablespoon of butter and some parmesian cheese.

    ^ AKA Grits. lol

Easier to find stone ground corn meal than "polenta" around here.

Both are just corn meal. Not sure how they're differentiated, maybe the grind? Grits, polenta, corn meal. Close enough for my mouth. I never had grits that I liked in SC or NC. :(

^probably didn't salt the water before cooking the grits. Unsalted grits taste like IDK, water mush? Have to put salt in them to cook or you'll empty the shaker out on your plate trying to get them to taste decent.

Cham, good recipe that will go far and very versitile is velveted chicken or beef. takes a little more effort than crock pot meal though.

cut chicken or beef into cubes/strips.

one or two egg whites and...Hell just go here http://chinesefood.about.com/od/cookingtechniques/f/velvetchicken.htm

put your favorite sauce on it. I like orange, but my wife and kids like teriyaki. just get a bottle of kikkoman on in the oriental section. can also make the sauce, but kikkoman is damn good.

Its basically the start of chinese recipes. steam or fry some rice, veggies of your choice (I like squash zucchini broccoli onions) throw everyting together and BAM! shit is good.

Also, about 5lb packs of boneless skinless chicken breast is alway 1.98lb at walmart, Only buy chicken at walmart. their beef is weird, even though it says choice. has a weird flavor.

(Picture of the pot roast searing in the pan. you the man! do that shit right!)

+1 on this. Walmarts chicken breasts are the best deal going in poultry. I use them all the time

i have spent 100$ in groceries in preparation for my next (7) meals.

    -Orange chicken
    -Chicken nachos
    -Pulled pork
    -Chicken/brocolli/potatoes and moar.

Im prepping all the meals at one time, placing them in gallon freezer bags and gonna live off of them. I figure if i make 7 big meals for 100$ i'll def come out on top by the time it's all said and done based on the time it'll take to eat it all, especially since the recipes are made for families of 4.

pretty much, it comes out to being super cheap meals. I still eat out on the weekends but the weekdays are strictly my own meals
