can i fit 17x9 rims on my stock 245/70/16 tires or what tires would make a nice fit with this size rim? would i have to do any trimming or anything for rims this wide?

No because the rims are 17" and the tires are only 16". You need to get new tires if you want 17x9 rims.

a 265/60/17 will be the same size, but a little wider than what you have now.
