    I get the 1# from Amazon - makes my life way easier; haven't noticed it getting less potent over time either.

    IDK about the using half thing - I made a mistake ordering the wrong kind years back and didn't adjust anything = same results so I just forgot about it..

    I've only bought mine in stores.

    But yeah one yeast is far different from the other, and you have to use half the quantity if it calls for the other. Could just be the recipe it's used in too...not to mention the water temps used when mixing it in water.

    For whatever reason, someone at work decided to [probably b/c we have gobs of guanciale] make some bacon out of the jowls so I brought some home to do 'quality control' - they just smoked it but didn't do the whole molasses cure//brine we usually do with the belly; it was really good.. and it crisped up way better than the belly bacon.

    It was way fatty and delicious and crispy [b/c of all the fat!] :hungry:

    I wound up getting the 1# off Amazon b/c I went thru those tiny jars too fast

    I forgot to mention something about the way I do my rolls.

    After I shape them and throw them on the pan, I egg wash them, then preheat the oven and let them sit for about 10+ minutes.

    I do one more egg wash after they sat proofing for the extra time, and throw them immediately into the oven.
