Are you 100% sure the coils you bought were stock oem coils?

    No expert diagnosis?

You've already ruled out everything incorrectly.

May start with sway bar. They came loosely attached to a tacoma strut however I don't know for absolute sure. They have no colored paint stripe at all. They are just black.

There are several other things that could be checked. The coils that were purchased may not be stock oem springs. No color scheme on them. From the pics the sway bar is missing. Don't really think that could be the problem but I'd put it back on to see if it makes any difference? Where's your "diagnosis" at to try and help the OP? Oh that's right. I don't see one.

Are they set on the second one up from the bottom or the third? Second would be .85 and third would be 1.75.

I took the sway bar out for this install to give me more room. I will try the sway bar first. Thanks everyone for your help in this. I'm about out of ideas.

They are set on the third one up. There is only one snap ring location showing above the bottom spring mount.

Is the passenger side suspension articulating correctly or does it seem to be bound up?

I'll have to check it again tomorrow but on a quick test drive to see if the height would settle the truck felt good and rode smooth.

Did you measure before they were installed?

Do the above numbers seem right other than the Front Passenger? Bilsteins set at 1.75 and Skyjacker 1.5 - 2.0 inch lift springs.

No I didn't measure before install. I still have the assembled struts that I may put back in and measure if the sway bar doesn't level it up.

From the ground to the top of the wheel well in the front on both sides I'm measuring 37 1/4 inches on the driver side and just a hair over 37 1/4 on the passenger side. That's measuring from the middle of the wheel. Now I do have 1/2 inch shims in the rear on both sides so it may make a slight difference in the front but it should be a pretty close comparable measurement for you to compare to.

    No.

Ground to fender is not the way to measure.

You need to measure from the center of the hub to the fender to actually know what lift height you have.

Gotcha. Makes sense. I'll re-measure in the AM.

Update: Parked truck on level ground and loosened and tightened rear leaf spring bolts to make sure those weren't hosing me. Put old struts in along with the sway bar this time. I'm back to within 1/4 from left to right on both the front and rear. I'm not for sure now if the new/used springs are at fault, the rear end was a little out and is now back, or the sway bar actually makes that much difference. So the next course of action is to take the old back out and try the new with the sway bar. Also verified without a shadow of doubt that the 5100's are set up correctly on the 1.75 notch. Thanks again for all yalls help. I'll keep updating until my truck is right again.

Yeah, might have been easier to put the sway bar on first with the new struts before swapping them out to see, but I think that's your next move. New struts with sway bar and see how it sits.

Final update: ordered some eibachs and installed them. I was within 1/4 inch afterwards. Already been lined up and driving it around. It rides awesome. Thank you all for your help.
