    A lot of it has to do with how thick the pepperoni is sliced and what casing is used on it. Also can have to do with temps they are cooked at and how long but more to do with the first two things.

    NY style pepperoni pizza, the pepperoni goes on when the pizza comes out of the oven. You don't cook it with the pepperoni on there. Or, if not when it comes out, right at the end to give it SOME heat. The curly/crispy happens if you cook it for the whole bake.

    Here's a couple oddities

    There is no pepperoni pizza in Italy. But prosciutto on pizza is the bomb.

    One thing I might try with pepperoni is cut each piece of pepperoni just one radial cut, just half way. It may still get weird but the cupping might be less.

    I like meat on pizza. Used to be a meat lover's pizza at a place in Grants Pass OR in the late 80's. Meat of all varieties at least an inch deep. Oh it was good.

    A new pizza place opened up down the street from me. They advertise a 3 pepperoni pizza. Beef pepperoni, pork pepperoni and cupped pepperoni. I'll have to give it a try. Don't know if you can tell the difference between the 3. Well the cupped would be obvious.

    Prepare yourself for this abomination.

    Carb Control tortilla, pizza sauce, crumbled bacon and shredded cheese.

    Threw the tortilla in the air fryer at 350 for one minute, flipped and air fried for another 30 seconds (probably could have used a full minute). Added toppings, back into the air fryer for another minute.

    And then since it was still a bit soft in the middle, I folded it in half and ate it like a taco.

    9 grams of net carbs.

    We do this often when we are cutting back on carbs. When we do them that way I tend to put more meat and veggies than normal so it's more filling lol.

    Makes sense - I used pre-sliced, and it was quite thin. Maybe next time will buy a stick and slice it a bit thicker.

    I did not know that - and can try that too. Some photos I see of pepperoni pizza show the pepperoni looking perfectly round and not cooked, maybe due to the method above.

    Looks good - I typically use 2 tortillas, pinch the edges to make them sort of stick to each other, just to make it a bit thicker.

    Thanks mahn, yes, exceptional ! We make one every couple of weeks. We use store bought pre-rolled dough out of shear laziness, but it is consistent, always available, cheap and tasty.
    Never tried the fake cheese.... I don't miss cheese really.
    My wife however is a cheese rat, but slowly weaning herself of it.
