    Edit: 3rd time using the cast iron pizza pans, and got the best results yet. Shooting for a Sicilian-NY-Pan Pizza hybrid. These didn't stick to the pans at all (the first two tries did). The next ones will be even better. :thumbsup:

    Olive oil. Less olive oil each time as the iron gets more seasoned. 550F oven for 12 minutes then 4 minutes on the gas stove top. Worked pretty well, but thinking even longer on the stove top next time, for a crispier bottom crust.

    I'm doing the final dough proof in the pan. So the iron and pizza are room temp when they hit the oven. Otherwise yeah, smoke city if you heat olive oil to 550F.

    Agreed - I do my Sicilian pie in a 550 deg oven for 15-20 mins and it's fine. It basically fries in a half cup of olive oil for a whole sheet pan full of pizza. It doesn't smoke at all since the pan isn't pre-heated.
