    U ever eat at a pizza pipeline ? I think they’re endemic to your neck of the woods. I remember it from my time in Missoula as being cheap nasty pizza that would deliver at 3am lol

    Ive heard of it, cant say I have had it. Pizza is one thing we dont have close by other that frozen stuff at out local market.

    time to buy some good flour and make a wood peel. Cherry and walnut should fit the bill :)

    I use the Onlyfire kit for weber kettles. A lot less than the weber brand.

    I use a base of lit coals and then add firewood pcs just around the back of the bbq and a small fire at the opening. Heat gets to over 800. A blend of 50/50 flour cornmeal to keep from sticking on stone. Buy a wooden pizza peel as dough sticks less to it than the s.s.peel.
    Use the flour blend on the peel and build your pizza on it. Slide it in the oven and keep an eye on it. Turning once in a while. Takea 3-7 minutes per pizza

    U can buy fresh dough at local bakeries we use fresh mozzarella and unicorn pizza sauces. Fresh basil goes on the last minute of the cook. Also use prosciutto and spicey salami. Tend to stay away from pepperoni
    We added pineapple and hot peppers to one. Ya that's so Canadian lol

    That’s cool that u have coals directly beneath the stone in addition to the periphery. I’ll have to try that.
    I have a pizzaque kettle conversion coming in the mail and am making a wooden peel for launching the pizzas :)597CB7FD-9856-4456-8C1B-6529DCE6C8C4.jpg
    I should have the cheese covered too, my mom’s cow is making milk right now so fresh mozz will be doable lol. I cut up some seasoned ash to boost charcoal fire so hopefully by next week sometime I’ll be cranking out inferno-forged pizzas :bananadead:

    thanks again for the tips and a rotisserie mod is definitely in my future too :)

    Once the crust starts cooking I use the peel and a pair of long bbq tongs and kinda just work it around spinning/turning it as the back of the grill by the flames is the hottest. Kinda like this video......

    oh hey I just thinking about this, when you go to plane it down down make sure you plane one side then the other. Not just off one side.
