    The apples we use are delicious red but really any apple would work. We slice thin and baked in pizza.

    Our Eggplant pizza is a little different then parm with a ricotta/ pesto mixed base and no red sauce.

    Here's my interpretation of the "Vermonter" on the left. I used yellow sharp cheddar and diced the apple about the same size as the ham and chicken. Added some thinly-sliced scallion for a bit of color. There's a drizzle of Vermont maple syrup on there, but it doesn't show up as well against the darker cheese.

    It was a massive hit with our guests. One of them said it was the best pizza he'd ever had. It's definitely earned it's place in the regular rotation!
