I have a new 2012 with the stock unit set up, is there anything that I can do to get a little more out of it? would buying an amp for the speakers do anything? or not because they are stock speakers... any suggestions/recommendations?

Hitch and wiring, aux back-up light, rear strobe lights, radio and underseat sub.
Underseat or behind the seat powered sub will work. I have a kenwood underseat sub and it makes me happy. You can hook it up to the factory speakers for its input and change the input if you upgrade the head unit later on.

Save for a head unit, speakers and amp as a package, or amp and new speakers while saving for a new head unit. Stock speakers with an amp would be a waste.
