My better half wanted a Kitchenaid stand mixer for Christmas. She asked “you want some meringue cookies?” I said “nope, let’s do some bread.” She’s making a simple white bread recipe and I’m pumped. First bread we’ve tried.

So many extra steps and prep with bread. She’s always enjoyed baking, I think she’s liking this. Hell, I’m looking forward to it.

    What flour?
    What yeast?
    What oven and temp?

    Tell us some more.

Do you like a more rustic crust?

Flour was Gold Medal brand All-Purpose Flour, yeast was Fleischmann’s brand Rapid Rise Instant Yeast, just a regular oven at 375F. Nothing fancy for the first shot at it.

    Basic tips:

Try bread flour next. Will rise a bit better.
Use regular yeast but make an overnight starter. You want a decent size growing culture. Read about making a "biga"
    https://duckduckgo.com/?t=ffsb&q=biga
Don't punch your dough down, just mix and knead it a bit. Let it rise and gently after that.
I would start hotter, 425°F, then put the loaf in and drop to 400°F for 10-15 minutes, then finish at 375°F
Spritz the oven with water or have a small separate pan of water in the oven. Gives the bread a serious crust.
