    For what? A topping? Definitely after if it's a topping. I don't add any butter and hardly any oil (maybe 1 tablespoon, tops) to my bread recipes.

    Ah, I see. Almost never. I'll very rarely brush dinner rolls with melted butter before they go in, but typically with bread I just sprinkle a little flour on top. Some recipes I'll put some egg on top, if I want to shine it up. When I cook in the dutch oven I'll roll the dough in some olive oil before I put it in the dutch oven to rise, just to keep it from sticking.

    I don't actually have one written down, I just make it. :laugh:

    Edit:
    As close as I can get it's
    2.25-ish cups of water
    6-ish cups of flour
    1 cup rolled oats (optional)
    2 tablespoons of yeast
    1 teaspoon of salt
    1 tablespoon of sugar/honey (optional)
    1 tablespoon-ish of oil (optional)

    1) Start out with 4 cups of flour, the yeast, honey/sugar, oatmeal (if using) and salt in the mixing bucket. Add the water and stir for 15 minutes.
    2) Add the remaining flour 1/2 cup at a time and mix until blended, usually another 3-4 minutes. The dough should be firm and smooth, not sticky or crumbly. Add more water or more flour as needed.
    3) Place dough ball in an oiled bowl and cover with a clean dish towel. Let rise until doubled.
    4) Once doubled knead a few times in the bowl, then cut the dough in half and knead on a floured surface a few times, then shape into a loaf and place in greased bread pans. Cover and let rise until doubled
    5) In the meantime, preheat the oven to 350 degrees. Once the loaves are doubled, bake for 45-50 minutes. Remove from oven and place on a cooling rack. Don't cut them open until they've cooled most of the way to room temp.

    Seriously, if you don't like to mix, knead, do bread stuff, you will like this. All you need is the machine and the stuff to go in it. And a pie plate.

    For the sourdough,

    1 cup sourdough starter
    2 cups water (ish)
    1 tsp salt
    5 cups flour (usually I do 1/2 whole wheat and half all-purpose)
    1 Dutch oven.

    1) Dissolve the salt in the water, then add all of the ingredients (minus the dutch oven) into a bowl and mix them. The dough will get sticky, but shouldn't stick to your hands too much. If it does, add some more flour a couple tablespoons at a time.
    2) Knead the dough in the bowl, making about 10-15 folds, until it starts feeling firmer and resisting the folds
    3) Cover the bowl and let it rise 12-24 hours (I usually let it set overnight and bake it the next morning)
    4) Preheat the oven to 400 degrees, grease the inside of your dutch oven (or give the dough a roll in some olive oil). Work the dough back into a ball and place in the dutch oven.
    5) Bake 20 minutes with the lid on, then remove the lid and bake for another 30-40 minutes (it really depends on your dutch oven; Mine is old and made of thick cast iron and takes closer to 40 minutes, but thinner ones will take less time)
    6) Remove the bread from the dutch oven and let cool on a rack for at least 30 minutes (it's still cooking inside, even after you remove it from the dutch oven) before you cut it open.


    As an alteration, sometimes I put it into the dutch oven immediately and let it rise in there, and just put it right into the oven. Still turns out well, but is more airy.

    I had a recipe once upon a time, but I've been making it for so long that the actual written recipe is long gone and I just do it from memory. But I don't really 'measure' it out very carefully any more, I just toss it all in together and adjust it if it needs it. If it's too crumbly I'll add a splash of water, if it's too sticky I'll add more flour. I'll add a little olive oil to the bucket if the dough is sticking to the walls, which is why it's optional. :notsure:

    I've been making bread for many years. Lots of different kinds. Here's my recipe for people new to baking. Don't be misled- this is a great recipe and I still make it frequently due to how easy it is. Truly a great loaf. It's about 10 minutes of actual "work", all said and done.

    Mix dry ingredients in large mixing bowl. Add wet ingredients. Stir until you have a shaggy ball. Yes, shaggy. It doesn't need to look like a nice smooth dough ball. Cover for 14-18 hours depending on room temp. (I just stick the bowl into a plastic grocery sack and set it on the fridge). 14 hours if 75°, 18 hours if 65°.

    The next day, dust the counter top, pour out dough. Gently form your loaf by folding 4 sides to center. Flip and Place in a low sided ~8-10" frying pan on parchment.

    Spray top with non stick spray. Cover with plastic wrap. When doubles in size, transfer to baking sheet by lifting sides of parchment. Score top of loaf (or not) and bake at 375° to an internal temp of 200°F. Maybe 30-45 mins. If it begins to darken too much on top, cover with foil after first 15 mins.

    I don't remember for certain where this recipe is from. I think I adapted it from a no-knead bread book that was popular several years ago.

    Used:
    2 cups King Arthur White whole wheat flour
    1 cup of my remaining all purpose flour

    Added:
    1/4 tsp extra salt
    1/4 cup ground flax

    Mixed with a wooden spoon and by hand in a large steel bowl. Only took a couple minutes or so.

    Thats how I roll (pun intended)! :D
