    If you ever want to make dinner rolls, it works really well for that, too. Just cut the recipe in half but keep the sugar the same and they turn out nice and airy

    I've missed a couple loaves of corn bread... Still hadnt gotten the nerve to break out any yeast yet

    Form them into 2" lumps and let them rise/bake on a cookie sheet or in a cast iron pan instead of in a loaf pan. Works great for sliders, too.

    If you let it rise in the dutch oven, don't open the lid before you put it in to bake, lol. Usually you're ok, but sometimes it'll collapse your loaf and you'll have a really dense sourdough...

    Odd that they're calling for it to be raw...
    The starter that I use calls for the potato to be boiled, and for the potato and the water to be mushed together (it ends up almost like a slushy in texture) and added to the mix.

    But, I'm sure that the function is the same, which is to help attract wild yeast.

    interesting. I made a batch last night, smells like its off to a good start--no pun intended. I did put it in a mixing bowl and it foamed up the bottom of the towel so Hopefully I didnt ruin the towel LOL. Im going to try a batch of bread tomorrow. :)
