Then get one and try it! They make good bread, but only the same day it's good. Next day, the crust is chewy. No idea why baking in the machine makes a difference, but it damned sure does.

Started the one on the left Sunday evening, the one on the right I started today. The one on the left was about the same height earlier when I mixed up the newer one on the right. Now it looks to be growing :D

so I made a fatal mistake. I guess I should have read more...the starter on the left was starting to do good, then apparently I didnt feed it enough and it produced some "hooch" on it to which I mixed up in the starter. Effectively killing it. I dumped it and started over. I also mixed flours, so I think the wheat flour stuff was more hungry than the other stuff I had, which needed more feedings. Oh well see what happens to this other starter. I cleaned the jar and started another batch.

took almost 10days but its looking good. I did get a different starter going and turned it into a mother starter/dough and made a couple loaves. It had good texture and nice flavor just not a lot of sourdough flavor. This batch actually looks good and is now responding like it should. Only thing I can think of is its a little chillier than normal temperature. Ive been following the instructions carefully and its now time to make a loaf. It smells a little sour and has also a fruity smell. the writing on the jars is 955am not ass LOL

The bread turned out good. It has a mild sourdough flavor. But is soft and it did proof nicely! Outside is crunchy inside is soft.

I've dialed my breadmaking back considerably this year; the GF went Gluten-Free last summer, so I haven't been making bread nearly as often as I used to.

Yeah, and I make her GF rolls and bread occasionally, but I don't like the texture of GF bread, and she can't eat regular bread. So rather than make two separate batches of everything, I switch off and some weeks I'll do gluten-free bread, and some weeks I'll do gluten-y bread
