If I have a wheel with a 5.5 backspace, people say that. 1.25 inch wheel spacer will make my wheels/tires fit.

    Ok now..

If I have a wheel with. 5.0 backspace, could I run a .75 inch spacer?

..like does cutting 0.5 in off the wheel mean I could cut 0.5 off the spacer?
Or does it not work like that?

I think so - 4.5 is what's required at the most. So if you're running 5 bs and get a .75 spacer it puts you at 4.25 bs from what I understand so that should work fine.
