The problem you will have with this (ask any finisher) is that all the excess moisture has to come out the top during the finishing process. It's doable, but it extends finishing time. In hot or windy weather, that is not a bad thing.

Vapor barrier is very important however, when you will be covering the slab with carpet, hardwood, sheet goods or VCT.
Moisture can wick up and destroy adhesives, years down the road.

For this, a long service life product like Stego is commonly used. These products must be taped at the seams with approved tape.

Vapour barrier under slabs in buildings is code here , so is perimeter styrofoam ( or equivalent ) insulation

Having vapour barrier under a slab in an outbuilding such as the OP's pole barn stops ground moisture from being wicked up through the concrete .

Yes, if you have a high water table vapor barrier is important.
It also allows future owners with completely different ideas, to apply floor coverings.

This.. I LOL'd when I read it.. OP if you get someone to lay your floor, its gonna cost you, but it gets done right. From the sound of it you don't have a whole lot of experience with this and doing a shop floor is a pretty good sized job.. And one you really don't want to screw up... No offense, just some advice.. Concrete work is a little harder than most think..

    Here's mine after getting poured....
