    If anyone can show how they do corned beef without using curing (nitrates/nitrites) salts, that would be nice.

    My wife cooks it and I have no idea what she does to it so I can't help but good luck with your search! Every man should have some quality corned beef and cabbage on St Paddy's day... and 1/2 way to St Paddy's day.
